Distillery Information

Hibiki 17 Year Old Japanese Whisky is crafted from a blend of over 30 unique whiskies produced at both Yamazaki Distillery and Hakushu Distillery, including some that have matured in previously-used Umeshu casks (Umeshu casks are specially coopered casks that are used in the maturation of plum liqueur).Hibiki is a meticulous blend produced using 10 different whiskies from the various House of Suntory distilleries. The malt whisky in the blend is sourced from the Yamazaki and Hakusku distilleries, with the grain whisky sourced from the Chita distillery. The Yamazaki Distillery is Japan's first and oldest malt whisky distillery established in 1923 by Suntory's founder Shinjiro Torii. Inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different to those of Scotland to create a unique kind of whisky.
n May 2018, Beam Suntory announced it would have to stop selling Hibiki 17 Year Old and Hakushu 12 Year Old. “At the moment, demand outweighs supply, making continued sales difficult,” a spokesperson summed up. When supply falls, demand isn't the only thing to rise: prices do, too.Hibiki 17 year old is a blend of the best single malts from Yamazaki and Hakushu, aged in different types of casks, and subtly mixed with grain whisky from Chita distillery.
Founded in 1899, Shinjiro Torii built the House of Suntory with a singular vision: to craft quintessentially Japanese spirits that would suit the delicate palate of his people.
