The Nova is matured for two years in freshly used red wine casks to maintain the wine to oak character while the climate of Australia aids in a rapid aging process. For the profile, the nose is swirling with glazed cinnamon rolls, light red fruits and a soft floral aroma.
Starward Distillery was established in 2007 in the Qantas Maintenance Hangar at Essendon Airport by David Vitale, and from humble beginnings and in the space of only a decade it's become the flagship of Australian craft whisky and an Australian whisky icon.
Starward is an experimental whisky producer. When it comes to the choice of grain, the distillery breaks traditional conventions with it's whiskies. With the Starward Two-Fold, for example, the whisky is distilled from wheat and barley malt.To be called a single malt whisky in Scotland, a bottle may only contain whisky distilled from malted barley and produced at a single distillery. The regulations of other countries may allow malted rye.
Close to 140 years later, Beenleigh Rum is still crafted at the same riverside location. Beenleigh proudly bears the title of Australia's oldest registered distillery, holding the country's 'Number 1' licence.
Australia- This single malt whisky is matured in Australian red wine barrels for 2 years. Light and fruity with notes of berries and flowers. Tart tasting with a long finish.100-Proof is a robust single malt whisky that is fully matured in American oak, red wine barrels and bottled at 100 proof (50% ABV).
I started my Starward journey with the red wine barrel aged single malt (classic, Scotchy, very much a pretty serious whisky) So I wasn't sure what to expect from this. Two-Fold is immensely drinkable and "user friendly. " It's great neat but would be perfectly welcome in most any drink.
