Appearance:
Sho Chiku Bai Nigori Sake presents itself with a cloudy, milky-white appearance in the glass, characteristic of traditional unfiltered Nigori sake.

Nose:

Sho Chiku Bai Classic Sake is naturally smooth and well balanced. The full-bodied flavor of it is deliciously enhanced when it is served warm. Pair with mildly seasoned foods such as grilled or poached fish or meat, sushi, tempura, and other Asian dishes.
Also known as the Three Friends or the Three Friends of Winter, Sho Chiku Bai is a decorative motif adapted from Chinese ceramics that incorporates elements of pine, plum, and bamboo.
Nigori can be made by either pressing sake – separating the liquid from the fermented rice solids, known as kasu – and then adding some of that mash back to the tank or by using a press with a loose enough mesh to allow for some of the kasu to pass through.Sake is made from rice, koji, and water. Alcohol may also be added. Here is an outline of the process of making sake. Either a traditional steamer or an automatic steamer is used for the steaming process.
Nigori literally means “cloudy sake”. Nigori is a style rather than a classification. Nigori style has rice solids (lees) suspended in the sake. Nigori is technically NOT unfiltered rather it is coarsely pressed (Sake undergoes both pressing and filtration). Nigori have wide range of texture and sweetness.This most traditional style of sake is naturally smooth and well balanced. The full-bodied flavor of Sho Chiku Bai is deliciously enhanced when It is served warm. Sake type & character: Type: Junmai-shu.This unique type of beverage is the opposite of sweet sake. Like with traditional wine, sake that doesn't have a fruity or sugary flavor is dubbed "dry." You can enjoy dry and clean sake with a range of different meals or start your evening off with a glass of our Sho Chiku Bai Extra Dry.It should be served well-chilled. I enjoyed this sake. Yes it was cloudy, a milky white color, which reminded me of coconut milk, and there was a lot of residue which adhered to the sides of my glass.
