Crafted with reverence to tradition and a commitment to quality, this exceptional whiskey pays homage to the legacy of its namesake, John Shenk, a pioneer of American distilling.

Shenk's Homestead Sour Mash Whiskey begins with a meticulous selection of the finest grains, sourced from local farms and milled to perfection. The mash bill, featuring a blend of corn, rye, and malted barley, sets the stage for the whiskey's distinctive flavor profile.

Each batch of Shenk's Homestead Sour Mash Whiskey is fermented using a time-honored sour mash process, where a portion of the previous distillation's stillage is added to the new mash. This technique ensures consistency and depth of flavor, resulting in a whiskey of exceptional complexity.

After fermentation, the mash is distilled in copper pot stills to achieve purity and clarity. The whiskey is then aged in charred oak barrels, where it matures and develops its unique character over time.

Distillery Information

Shenk's Homestead Sour Mash whiskey is a small-batch American whiskey produced by Michter's Distillery in Louisville, KY. The brand honours the legacy of the original Michter's Distillery in Schaefferstown, PA, which was owned by Swiss Mennonite farmers John and Michael Shenk and began distilling in 1753.A whiskey with a smooth, creamy mouthfeel that nails its funky weirdness and its long, sweet finish. The Shenk's Homestead brand is part of Michter's Legacy Series, which also includes Bomberger's Declaration and is intended to honor the brand's history. The ingredients generally included in sour mash bourbon are grains such as barley, rye, or corn. Tennessee and Kentucky is where they create most bourbons using the sour mash method, but only a few distilleries include the terminology in their marketing.Additionally, for its maturation we utilized two different and quite special barrel profiles: a portion of it was aged in 18-month naturally air-dried and seasoned wood with our signature toast and char profile and a portion of it was aged in special toasted French oak barrels that were made from 24-month air-dried ...
Spent mash is also known as spent beer, distillers' spent grain, and slop or feed mash because it is also used as animal feed. The acid introduced by the sour mash controls the growth of bacteria that could taint the Bourbon. An established and active strain of live yeast is introduced into the mash to be fermented.Sour Mash Whiskey” is simply whiskey made using the sour mash process. A mash, of course, is a solution of ground up grain and water, prepared to make grain starch available for conversion to sugar and then, through fermentation, into alcohol.
