Severo Tequila Reposado begins with hand-selected blue agave plants, harvested at peak maturity to ensure optimal sweetness and complexity. The piñas, or hearts of the agave, are slow-roasted in traditional brick ovens, allowing their natural sugars to caramelize and develop rich flavors. After fermentation, the agave juice is distilled twice in copper pot stills to achieve exceptional purity and depth of character.

The tequila is then aged in oak barrels for a minimum of six months, allowing it to mature and develop its unique flavor profile. During this time, the spirit absorbs the subtle nuances of the oak, imparting notes of vanilla, caramel, and spice while retaining the distinctive agave character.

Distillery Information

Severo is an ultra-premium handcrafted sipping tequila and is distilled by one of only two remaining Mexican-owned heritage tequila distilleries, Casa Don Roberto.
A quirky, artsy city of 26,000 inhabitants about 40 miles from the state capital of Guadalajara, a visit to Tequila proper is a must for any true agave aficionado. There are about 150 registered distilleries in all of Jalisco, of which about 20 reside in the namesake city and immediate area.The first distillation process takes place in steel distillation columns, during which water is removed and alcohol is concentrated from fermented agave juice. The second distillation takes place in stills to obtain tequila with a range of 55-65% alcohol, depending on the brand.
Light and smooth CaliFino Reposado is made with 100% Blue Weber agave and aged for 12 months in American Oak. It's a light-amber, golden color and smells fresh and oaky from the barrel. Ideal neat, on the rocks, or in cocktails, you'll get notes of vanilla and buttery spice with a creamy honey finish.
Melly Barajas is the master distiller behind “Leyenda de Mexico." The world of tequila is one of many male-dominated industries, but one female entrepreneur has managed to build her own tequila business from the ground up – all while employing other women.The home of El Tequileño is the historic 'La Guarreña” distillery located in the magical town of Tequila. El Tequileño is exclusively made here and this has not changed since it was founded by Don Jorge Salles Cuervo in 1959.
While some distilleries make just one Tequila, others might produce several. “Drinkers may not realize that the 3,000-plus Tequila brands on the market today come from fewer than 200 distilleries,” explains Jim Ruane, chief growth officer of Cierto Tequila.
