Rosaluna is an all-natural, handmade agave spirit distilled in the rolling hills of Santiago, Matatlán—the heartland of mezcal in Oaxaca, Mexico.
Mezcal minero, produced in Santa Catarina Minas, is traditionally distilled in clay pots. Allegedly, those clay pots lend a certain distinctive flavor to the mezcals.
These terms refer to whether or not a mezcal was aged in oak after distilling. Joven, or "young," mezcal, is clear and unaged, like an eau de vie. Reposado is "rested" in oak for more than two months but less than a year. Añejo is aged for one to three years, and extra-añejo ages for longer than that.
The most well-known maguey is the blue weber agave, because it's used to make tequila. You read that right—tequila's a type of mezcal. Excluding tequila, the majority of mezcal is made from the espadin agave plant because it's high in sugar and matures quickly.
