Distillery Information

Matusalem & Company is a manufacturer of premium Caribbean rum. Founded in Santiago de Cuba, it is now produced in the Dominican Republic.
White or light rum is a distilled alcoholic drink made from sugarcane products, such as molasses, or sugarcane juice, that is filtered and bottled right away without the aging process used for darker rums.
2. Distillation Process. Both dark and white rum brands go through a similar distillation process. Typically white rum is distilled in a column still, which allows for continuous distillation.
It is popular all around the world, and as the Latin name suggests, it is distilled from fermented sugar cane or molasses. Rum can be classified as light, dark, or simply flavored. There are two particular styles of rum—the modern “light” style and traditional rums.
The skill of the distiller is to use the distillation process to separate and collect the alcohols and flavour compounds (congeners) wanted in the finished rum. The lightest of these, the 'low wines' (those with a low boiling point) will be given off first and many of these most volatile compounds are harmful.
The ideal pH is 4.5 to 5.0. Use citric acid to bring the pH down and calcium carbonate or baking soda to bring it up. Pitch 1x 20g packet Still Spirits - Distillers Yeast - Rum - sprinkle on top of the wash. Allow to ferment in the temperature range 20-35C.
