It is then aged in wooden barrels (typically oak) for at least one year but can be aged up to three years. During the aging process, the tequila will take on the aroma and flavor profile of the wood it's matured in.The first distillation process takes place in steel distillation columns, during which water is removed and alcohol is concentrated from fermented agave juice.
