Distillery Information

Cabernet sauvignon is a full-bodied, acidic wine made from the international red wine grape variety of the same name. It has strong tannins that mellow with age. Cabernet sauvignon wines are high in alcohol, usually in the 13–14 percent range.Bordeaux is very much the “OG” Cabernet Sauvignon growing region. It's here where you'll find some of the most savory and age-worthy expressions of the grape. Still, you won't find a lot of single-varietal Cab here – most are blended into the region's eponymous “Bordeaux Blend.”
The Cabernet Sauvignon grapes were created because of an accidental cross breeding of a Cabernet Franc grape and a Sauvignon Blanc grape in 17th century France. The resulting in a small red grape is extremely resistant to the elements due to its thicker more durable skin.

Cabernet Sauvignon is a varietal born of the popular white Sauvignon Blanc and the deep red Cabernet Franc. Sauvignon, from the French word sauvage, means “wild” and perfectly describes Cabernet's journey from the accidental result of cross-pollination to the world's most popular red wine type.
Full-bodied red wines like Cabernet Sauvignon are deeply colored and express fruits like blackcurrant, dark cherry and plum. Their darker color often indicates a possible presence of higher tannins. The dense palate expands with spicy smoky notes.
The ideal serving temperature for a cabernet sauvignon wine is going to be around 60-degrees Fahrenheit, but Austin Hope likes to suggest serving it at 57-58 degrees for the best flavor.
The percentage of Cabernet Sauvignon used in the blend will depend on terroir and the winemakers' styles as well as the vintage. The First Growth estates of Château Mouton Rothschild and Château Latour are noted for regularly producing wines with some of the highest percentages of Cabernet— often around 75%.
