Rabbit Hole is partly owned by founder Kaveh Zamanian and international spirits company Pernod Ricard. What bourbons and whiskeys does Rabbit Hole produce? Rabbit Hole produces several bourbons, a cask-finished bourbon, rye whiskey and a barrel-aged gin.He founded the business and developed the recipes for the whiskies in 2012, sourced contract whiskey based on those recipes in 2014, broke ground on the Rabbit Hole Distillery in 2016, and officially opened the distillery in 2018.
Boxergrail is a Kentucky straight rye whiskey made from a mashbill of 95% rye and 5% malted barley (for enzymes). The mash is aged “over 3 years” in new charred American oak barrels and then bottled at a robust 47.5% ABV.In the United States, rye whiskey is, by law, made from a mash of at least 51 percent rye. (The other ingredients in the mash are usually corn and malted barley.) It is distilled to no more than 160 U.S. proof (80% abv) and aged in charred, new oak barrels.
And, that's exactly what makes the story of Kaveh Zamanian, Rabbit Hole's founder, all the more impressive. Kaveh originally had no ties to the spirits industry. He came with his family from Iran when he was just a teenager and studied to eventually become a clinical psychologist and psychoanalyst.The crown jewel of an urban campus in the heart of downtown Louisville, the award-winning Rabbit Hole Distillery is a new, modern, 55,000-square-foot distillery introduced to an industry steeped in tradition.
There have also been a few limited edition whiskey bottlings as well as a gin and a vodka. Significantly, Rabbit Hole opened its own state-of-the-art distillery in 2018 in the NuLu neighborhood of Louisville, KY. Certainly, you should expect to see whiskeys from that distillery in due time.
