Bourbon distillation is the process of purifying the bourbon by heating and vaporizing it. The vapor, once condensed, is collected to obtain a purer and more concentrated alcoholic substance. Most distillers put bourbon through distillation twice. In the first step, the bourbon goes through column stills.Pin Hook began as a tiny settlement that served as a traveler's rest before the railroad town of Durham was established in the early 1850s. Pin Hookers were folks who bought tobacco leaf that went unsold at auction, repackaged the product, and sold it for a tiny profit.

Developed, distilled and aged over 2 years at Castle & Key Distillery in Frankfort, KY, our latest rye was blended and proofed by Sean Josephs, our Master Blender.
The primary requirement that defines bourbon as straight is if the distillate has spent a minimum of two years stored in new charred oak barrels. The only exception to this rule is corn whiskey, which is aged in uncharred or used oak barrels. During the aging process, Bourbon oxidizes and penetrates the wood.
Whiskey is a distilled alcoholic beverage made of fermented grains. Different grains are used, including barley, corn, rye, and wheat and all result in a different flavor or kind of whiskey. Whiskeys are also aged in wooden casks, which are sometimes new or sometimes used casks from other alcohol aging.
