From the locally sourced, pure blue agave of Felipe J. Camarena's distillery, El Pandillo, the Pasote Añejo is the longest aged tequila from this range, spending one year in American ex-bourbon barrels.
Inspired by the legend of Aztec fighters, Pasote Tequila Reposado is made by master distiller Felipe Camarena at El Pandillo Tequila Distillery in the Los Altos (Highlands) region of Jalisco.
Distilled with pure rainwater and natural spring water in 100% copper pot stills. Barrel-aged for 48 months in underground caves, the result is an unrivaled extra añejo tequila from Pasote.
For a tequila to be considered an añejo, it has to spend between one and three years aging in barrels no larger than 600 liters. Meant to be sipped, the additional time in wood results in amber hues and complex flavors of honey, vanilla, and baking spices that some liken to whiskey.Sometimes Reposados seem half-hearted efforts. But Pasote Reposado Tequila strikes a great balance between the pepper-and-fire of un-aged “Silver” Tequilas and the savory/sweet notes of more expensive “Añejo” (older) Tequilas. It's Tequilas like this that actually make the category of Reposado worth having.
