The 75 barrels reached peak maturation on the sixth floor of Rickhouse Y. It is bottled without chill filtration at 122 proof. Developed by Heaven Hill Distillery's own Master Distillers, Wheat Whiskey is the first new style of American Whiskey to be introduced since Prohibition.

Charring. Distillers char the inside of their barrels at varying levels, ranging from Level 1 (15 seconds) to Level 7 (3.5 minutes) and beyond. We char at Level 3 (40 seconds), which leaves a ¼-inch-deep layer of char inside the barrel.
The 2023 release of the Heaven Hill Heritage Collection is a 20-year-old Corn Whiskey. Bottled without chill filtering, this 115 proof whiskey showcases our traditional corn mashbill of 80% corn, 8% rye and 12% malted barley.
I spent a good deal of my life up at the Clermont, KY distillery–For a time, I even lived in a house right there on the grounds. This land has been home to Jim Beam spirits for nearly a hundred years.
