Distillery Information

The Noble Experiment was founded in 2012 an is New York City's first and only exclusive rum distillery in almost a century. It was founded by New York native Bridget Firtle who named her rum in honor of the iconic Prohibition-era hustler and rum runner Owen 'Owney' Madden.
After five to six days in fermentation, the resulting “wash” is transferred to our 500-gal pot still, where the liquid is heated to separate the alcohols. The still converts the alcohols to vapor form and then returns it to liquid through a condenser.In 2012, Bridget C Firtle, established The Noble Experiment NYC to bring the timeless tradition of rum distilling back to New York City.
Light rums tend to originate from countries originally colonised by the Spanish, such as Cuba, the Dominican Republic, Puerto Rico and Venezuela. Heavy rums traditionally come from former French and English colonies, including Haiti, Jamaica, Martinique, Barbados, Guyana and the Virgin Islands.
Fermentation. Whether you're making rum with sugar cane juice, syrup, or molasses, all of them will need to be converted into booze via fermentation. For this you need yeast. Rum distilleries will often have proprietary strains of yeast, mostly cultured yeasts, but natural yeast can be used too.
