Distillery Information

Originating from France's Bordeaux region, this grape has found its way into vineyards from Napa Valley's sunny slopes to the grassy terrains of Australia. Cabernet Sauvignon is famous for its deep, layered flavors – a mix of dark fruits such as blackcurrant, with hints of green pepper, and often a hint of oak.The nose is nuanced with toasty oak imparting a subtle smoked meat character. Flavors of blueberries and blackberries mix with the warmth of vanilla and toasted bread. Silky tannins and striking smoothness. Mouthwatering, lengthy finish trails off with the taste of unsweetened chocolate and cassis.
DNA analysis performed at UC-Davis in the 1990s confirmed that the variety is the progeny of Sauvignon Blanc and Cabernet Franc. It was very likely the result of a chance pollination as mixed cultivars were grown side by side in vineyards at that time.
Chuck Wagner and his late parents, Lorna and Charlie, started Caymus Vineyards in 1972. They were a family of farmers with roots in Napa Valley dating back to the 1850s. Today, the family's two Cabernet Sauvignons – Caymus Napa Valley and Caymus Special Selection – are among the region's most celebrated wines.
Cabernet sauvignon is a full-bodied red wine. It tops the list of robust red varietals, carrying some of the lushest, thickest sips that will coat most of the mouth and linger. Many describe cabernet sauvignon's body as unctuous, gravelly, rich and deep. The region the grapes grow in will also impact the wine's body.
