Artisanally produced and bottled in Oaxaca.
One of the classes of mezcal as defined by the Norm. White mezcal, receiving no treatment after distillation. Also called blanco, although joven is the traditional and preferred term. Madurado en vidrio: “Matured in class.” One of the categories of mezcal as defined by the Norm.Mezcal distillation is a traditional and artisanal process. Most producers use clay or wood stills heated by direct fire, often with materials from the surrounding environment. These stills are much smaller than modern ones, making batches unique and limited.“All tequila is mezcal, but not all mezcal is tequila.” It's a statement that gets tossed around a lot, and it is, in spirit, true: Mezcal is any liquor distilled from agave, a succulent plant native to the Americas, and tequila is made with the blue Weber agave species.Mezcal UNIÓN is an artisanal handcrafted spirit produced by the union of Zapotec Mezcal producer families from the Sierra of Oaxaca, Mexico. Their main goal is to unite families offering them a fair trade business model and path to social development.
More than 90% of mezcal is made in the Mexican state of Oaxaca, but is now produced and commercialized throughout Mexico for the national and international market. Native fermented drinks from maguey plant, such as pulque, existed before the arrival of the Spanish.
The Tequila Joven is produced in the highlands of Jalisco. After 8 years, the private estate agave is harvested and cooked in an autoclave and then fermented with yeasts that have been used for decades in the hacienda, then twice distilled in a 100 year old copper pot still.
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey. Mezcal is defined as any agave based spirit. This includes tequila, which is made in specific regions of Mexico and must be made from only blue agave (agave tequilana), whereas Mezcal can be made from a wide variety of agave.
