Cognac can only be made from grapes grown in the strictly defined Cognac region of France. It must be made from the juice of at least one of three particular grapes, the most common being Ugni Blanc and the other two being Folle Blanche and Colombard.
A blend of eaux-de-vie aged a minimum of 2 years, this Cognac offers aromas of candied fruit, toffee, vanilla, and wood spice; the palate is full and warming with flavours of chocolate, orange, vanilla, and Christmas cake spices followed by a long and balanced finish. Gautier XO is aged up to 35 years creating a finer, rounder and fuller cognac. A contemporary, elegant bottle of clear glass to highlight the authenticity of the product, giving full expression to its rich and natural gold color.
Cognac know-hows were developed over several centuries. It all started with distillation, introduced in the 15th century by the Dutch, this technique enabled Charente's wine to preserve its quality during transportation. Three centuries later, stills were modified and double distillation appeared.
Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
