Distillery Information

Los Javis is a family-owned mezcal distillery in Santiago Matatlán, Mexico. The distillery was built in 1979 by Javier Mateo and his brother, and the Los Javis brand was founded in 2003.
Los Javis Espadin Joven Mezcal is an artisanal mezcal made from hand-selected agave. The agave is roasted in a conical stone oven, milled with a tahona, and naturally fermented in wooden vats. The mezcal is described as having notes of orange blossom, honeydew, and fresh olives.
Joven is a class of mezcal that receives no treatment after distillation. It is also called blanco, but the traditional and preferred term is joven.
