Embark on our four-grain journey, rooted in the heart of two Colorado family farms where heritage corn and heirloom varieties of wheat, barley, and rye thrive. As we turn the page, our meticulous cooking technique unfolds, meticulously breathing life into each grain's unique character. Through an open-air sour mash process, we infuse soulful complexity into our creation, crafting a narrative that celebrates the essence of each individual grain.
The bourbon's mash bill is 60% corn, 20% heirloom wheat, 10% heirloom rye, and 10% heirloom malted barley. The distillery aims to balance the flavor grains so that all of them can be tasted in the whiskey.
Nose: The wheat in the mashbill is apparent. Palate: The strawberry note carries forward onto the entry. Finish: The sweetness comes back a little bit.
