High West Distillery is located in Park City, Utah and was founded in 2006 by David Perkins and his wife, Jane. The distillery is the first legal distillery in Utah since the 1870s.
High West Yippee Ki-Yay is a blend of three rye whiskeys aged 2–16 years.
It's aged in new, charred, white American oak barrels and finished in French oak barrels that previously contained vermouth and syrah wine.
The mashbill includes 95% rye, 5% malted barley from MGP, 53% rye, 37% corn, 10% malted barley from Barton 1792, and 80% rye, 20% malted barley from High West. It has a proof of 92 (46% ABV).
High West launched Yippee Ki-Yay on December 5, 2015 to commemorate Repeal Day, but discontinued it in Summer 2020.
