FEW, the grain-to-glass Illinois distillery, makes its American Whiskey by blending FEW Bourbon and FEW Rye whiskeys along with its new experimental cherrywood-smoked malt whiskey. There is no-age statement for this whiskey which is bottled at 46.5% ABV.
By law, Bourbon Whiskey must be made from at least 51% corn, which gives it its typically sweet taste. The remaining grains used are rye, which is very spicy, mild wheat and barley, which is essential for the fermentation process. American Whiskey is mainly distilled in column stills.
A grain-to-glass distillery since 2011, FEW Spirits produces award–winning craft whiskey and gin in a tucked away alley located in the growing Chicago suburb of Evanston, IL..
The brand is named after the initials of Francis Elizabeth Willard, a famed temperance reformer. So anytime you toast with a pour of FEW bourbon, you're drinking in honor of a teetotaler.Small distillers use a variety of equipment which is probably too broad to generalise but the larger producers tend to use a combination of column and pot stills, which are run continuously. After fermentation, the beer-like liquid is typically first distilled in a column still.
