Distillery Information

At Faust, David regularly introduces innovative and incredibly detailed methods in the growing, harvesting, and fermentation process, but his winemaking philosophy is simple. “We really strive to make sure our wine has a lot of purity, and a lot of character,” he explains.
Cabernet sauvignon is a full-bodied, acidic wine made from the international red wine grape variety of the same name. It has strong tannins that mellow with age. Cabernet sauvignon wines are high in alcohol, usually in the 13–14 percent range.The result is a Cabernet Sauvignon with broad varietal character, including appealing herbal notes with its generous ripe fruit, and depth and texture not often found in this price range. The grapes were hand-picked, double-sorted and crushed, then cold-soaked and fermented in both French oak and stainless steel tanks.
The 2021 Cabernet Sauvignon is smoking good, with a full-bodied, rich, opulent wine that has classic cassis and darker blue fruits as well as leafy tobacco, baking spice, and bouquet garni notes. This textured, ripe, sexy wine stays nicely balanced, has ripe tannins, and a great finish.
Goethe completed a preliminary version of what is now known as Part One in 1806. Its publication in 1808 was followed by the revised 1828–29 edition, the last to be edited by Goethe himself. Goethe finished writing Faust, Part Two in 1831; it was published posthumously the following year.
