Established in 1972, Dry Creek Vineyard is Dry Creek Valley's flagship winery located in the heart of Sonoma County, California. As the region's first new winery following Prohibition, founder David Stare paved the way for a viticultural rebirth in this vibrant winegrowing appellation.
One of the first two wines Ferrari‐Carano ever made 40 years ago, our Fumé Blanc is comprised of Sauvignon Blanc grapes from Sonoma County and North Coast California.
This is achieved by fermenting a proportion of the fruit in oak barrels. The fruit used is usually Sauvignon Blanc, but in some vintages also includes Semillon.The primary difference comes after the wine has been produced and how it is aged. Fume Blanc is a Sauvignon Blanc that is typically aged in oak barrels after fermentation while Sauvignon Blanc is traditionally aged in stainless steel vats after fermentation.Although there are certainly exceptions, Fume Blanc typically sees a bit of oak and displays rounder, richer, more melon-like flavors. Sauvignon Blanc, on the other hand, often displays the grassy and sharper citrus aromatics of the varietal.
A Fumé Blanc refers to a dry Sauvignon Blanc with some French oak influence in the wine. Originating from the Bordeaux region of France, Sauvignon Blanc is a green-skinned grape, white wine variety which has gained a popular following here in Australia.
Fumé Blanc is a rich style sauvignon blanc with notes of apricot, persimmon and walnuts. There is still plenty of acidity to balance out the more developed fruit flavors. Drink with an Arugula Salad with Pomegranate Seeds, Rosemary Roasted Chicken or Baked Squash.
