Cognac must be distilled in column stills. -The stills must be directly heated with flames. -The stills must use an older style of condenser called a 'worm tub'. -Cognac must be double distilled in copper pot stills.Double distillation is required to make eaux-de-vie for cognac. In the first, a raw spirit called “brouillis” is produced. The second distillation produces a much higher alcohol content. Only the middle part, the 'heart', is saved.
Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
Distilling is essentially the process whereby a liquid made of two or more parts is separated into smaller parts of desired purity by the addition and subtraction of heat from the mixture. The vapours/liquids distilled will separated other ingredients that have lower boiling points.
