Cognac can only be made from grapes grown in the strictly defined Cognac region of France. It must be made from the juice of at least one of three particular grapes, the most common being Ugni Blanc and the other two being Folle Blanche and Colombard.
Despite what you might think, Champagne Cognac is not made from Champagne, in the region of Champagne, nor from the grapes used to make Champagne. Champagne is made from Chardonnay, Pinot Noir, and Pinot Meunier grapes. Cognac is most often made from Ugni Blanc grapes.To classify as a VSOP Cognac, the youngest eau-de-vie in the blend must be at least four years old.
Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.

By this definition cognac is definitely a brandy, produced as it is from fermented grape juice. To many people however, Maison Martell included, cognac is in a class of its own when compared to compatriots in the brandy category.
