Distillery Information

Copal Tree Distillery
Using that same commitment to the local ecosystem, Copalli Rum is created in a zero-impact facility using a non-hybridized sugarcane varietal native to the area. Copalli White, Cacao and Barrel Rested Rums use only heirloom sugarcane, pure canopy water, and yeast.rum, distilled liquor made from sugarcane products, usually produced as a by-product of sugar manufacture. It includes both the light-bodied rums, typified by those of Cuba and Puerto Rico, and the heavier and fuller-flavoured rums of Jamaica.
After five to six days in fermentation, the resulting “wash” is transferred to our 500-gal pot still, where the liquid is heated to separate the alcohols. The still converts the alcohols to vapor form and then returns it to liquid through a condenser.The Cacao chocolate-flavored rum is creamy with mocha notes and even with an 80-proof ABV—which is part of what makes this rum so unique—it has a buttery smooth taste, highlighted by subtle notions of spice. The journey comes full circle with the accent of balanced cacao nibs and a pleasant strong coffee finish.
