Copalli Organic Barrel Rested Rum is a rum from Belize. It comes from the Copall Tree Distillery, located in the heart of the primary rainforest. Organic sugar cane is grown here, with the utmost respect for the environment.
In July of 2018, Copal Tree Distillery opened and began producing Copalli Rum. The farm-to-flask initiative supports sustainable agriculture causes in Southern Belize by producing and selling premium organic spirits. The distillery is located adjacent to Copal Tree Lodge and its 3,000-acre organic farm.
The sugar cane juice is distilled in column and pot stills, and the rum is then rested in used American Oak bourbon barrels which mature in the unique rainforest climate, to create a rich, sweet rum that tastes delicious served neat, on the rocks, and in cocktails.
Rum is aged in wooden casks, the most common of which are Ex-Bourbon American White Oak barrels. These are usually 200 litre charred barrels, that impart high levels of coco lactones and vanillins into the rum.
