Distillery Information

Gin is made using a clear, neutral spirit made from distilling grains such as rye, barley, wheat, or corn. While another common clear liquor—vodka—can be made with similar grains, gin and vodka are definitely not the same.Gin initially comes from a grain base, usually wheat or barley, before producers add botanicals and water. Spirits must have a predominant flavor of juniper berries to be categorized as a gin. In addition to the grain and juniper berries, producers add botanicals, herbs, and spices to give it a distinctive flavor.The key difference between regular gin and London dry gin is that while regular gins are often sweetened after distillation (with sugar or syrup), London dry gins are not sweetened at all—a feature that gives them a less syrupy taste and more of an herbal bite.Distilled gin is produced in a very similar way to London Dry gin, but the main difference is that flavourings can be added after the distillations and these flavourings can be either natural or artificial.
The most common styles include London Dry, Navy Strength, Plymouth, Genever, Old Tom, Aged, and New Western. "It is so region-specific and also versatile," says Marlon Rowley, head bartender at Virgin Hotels NYC's Everdene restaurant.
