Camus Borderies XO is an exceptional cognac that derives its unique finesse from an exclusive composition. Crafted from meticulously selected eaux-de-vie in the family vineyard of Maison Camus, located in the charming Borderies cru of the Cognac region, this beverage undergoes prolonged aging.
Cyril Camus—the fifth generation of the Camus family—heads the company which counts 500 employees in eight countries on three continents.Cognac is distilled twice in onion-shaped copper pot stills (called alembic charentais), but unlike whisky, there is a strict timetable enforced. In the Cognac region, distillation begins towards the end of November, and must be finished by 31 March the following year.Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
XO cognac is the result of outstanding craftsmanship from the harvest of the grapes of Grande and Petite Champagne to the aging in French oak casks, for at least 10 years, enabling Rémy Martin XO cognac to express all the opulence of Cognac Fine Champagne.
Cognac is therefore a brandy, but an exceptional brandy thanks to its method of production and its specific and demanding specifications. Cognac has been subject to relatively strict specifications since 1936: Production in a specific geographical area, around the town of Cognac.
