Distillery Information

The rum is distilled twice in simple pot stills, producing a distillate of clear colour that turns to a golden hue as the distillate takes up substances from the oak of the wooden puncheons used for storage during the aging period. Colour is deepened by the addition of caramel after aging.The traditional history of modern-style rum tells of its invention in the Caribbean, in the 17th century, by slaves on sugarcane plantations, who discovered that molasses, a by-product of the sugar refining process, could be fermented into alcohol, and then distilled.
Fermentation. Whether you're making rum with sugar cane juice, syrup, or molasses, all of them will need to be converted into booze via fermentation. For this you need yeast. Rum distilleries will often have proprietary strains of yeast, mostly cultured yeasts, but natural yeast can be used too.
Basically, it's rum that's flavored with botanicals like fresh or dried herbs, spices and edible flowers. Usually, the base is white rum. And, like most types of rum, there are no geographical restrictions, so it can be made pretty much anywhere.
