Founded by Stephen Gertman, CEO & Master Distiller, along with his family, Breaker Bourbon is the first bourbon to be produced in Southern California since Prohibition. This distillery is located in Buellton, CA at the entrance of Santa Rita Hills AVA in north Santa Barbara County.
It's less flavorful than rye, so it allows more of the corn's sweetness and vanilla from the barrel to come through. Some might see it as a slightly flavor-neutral grain, but its defenders believe that wheat retains its flavor over the course of extreme aging (10 to 20 years).
Typically, bourbon distillers use rye and malted barley in the other 49% of the mash bill. Wheated bourbon simply replaces the rye with wheat, either in whole or part. Wheated bourbons meet the requisite requirements for being a bourbon yet have their own distinct flavors.Breaker Bourbon is a sourced whiskey from MGP in Indiana where it is distilled and aged. The whiskey is blended and bottled in California. Aged for a minimum of 5 years, the whiskey is blended from 8 barrels to make each batch.
For a whiskey to be considered Bourbon, its mash – the mixture of grains from which the product is distilled – must contain at least 51% corn. The rest of the mash is usually filled out with rye or wheat, and malted barley.
Wheated bourbons and whiskeys are renowned for their smoother, sweeter profiles, achieved by replacing the traditional rye grain with wheat in the mash bill. This substitution allows for a softer, rounder taste, often accentuating caramel and fruity notes.
