Whisky Distilleries in Scotland. There are nearly 150 active whisky distilleries spread across Scotland, which are split into five whisky-producing regions: Campbeltown, Highland, Islay, Lowland and Speyside.
Single malt Scotch whisky must have been distilled at a single distillery as a batch process using a pot still distillation process and made from a mash of 100% malted barley. Single malt means that the whisky has not been blended elsewhere with whisky from other distilleries.
The production of single malt Scotch whisky begins with malting the barley by steeping it in water and spreading it across a malting floor, allowing it to germinate. This starts the conversion of starch within the barley into sugars, which mixed with yeast will create the alcohol.
