Southern Star Paragon Wheated Straight Bourbon Whiskey is the distillery's brand new offering released in late 2021. This is distilled, aged, and bottled on-site at the Statesville, NC distillery using a mash bill of 70% corn, 16% wheat, and 14% malted barley.
Bourbon distillation is the process of purifying the bourbon by heating and vaporizing it. The vapor, once condensed, is collected to obtain a purer and more concentrated alcoholic substance. Most distillers put bourbon through distillation twice. In the first step, the bourbon goes through column stills.
Typically, bourbon distillers use rye and malted barley in the other 49% of the mash bill. Wheated bourbon simply replaces the rye with wheat, either in whole or part. Wheated bourbons meet the requisite requirements for being a bourbon yet have their own distinct flavors.
Wheated bourbon simply means that there is wheat in the mash bill. Bourbon must have at least 51 percent corn, and the rest is usually rye and malted barley. With wheated bourbon, wheat is either added to the mas bill to make it a four-grain bourbon, or used as a substitute for the rye.
