Tequila is a distilled beverage made from the blue agave plant. The drink is typically composed of 40% – 60% alcohol by volume (80 – 120 proof) and is made in Mexico. Tequila is made from the heart of the agave plant, which is called the piña.The first distillation process takes place in steel distillation columns, during which water is removed and alcohol is concentrated from fermented agave juice. The second distillation takes place in stills to obtain tequila with a range of 55-65% alcohol, depending on the brand.
In 1940 the distillery was relocated to Ojo de Agua in the Los Altos region of Jalisco. They were the first distillery to introduce an extra-aged tequila to the Mexican market in the 1990s the San Matas Gran Reserva.
Tequila is a distilled spirit made from the Weber blue agave plant that grows in Mexico. The blue agave plant has huge spikes that come up from a central core that is called the pina. After the leaves are removed, the pina is the part of the plant that is used to make tequila.In other words, the aromatic and sensory notes that exist in a tequila, are the main characteristics that make up and describe each kind of tequila. If we use stills for a second distillate, more sensory notes will be perceived in the final product.
