The agave juices are then distilled, which purifies the liquid and concentrates the alcohol in the mixture. Tequila is typically distilled twice. The first distillation produces a cloudy liquid called the ordinario. The second distillation produces the clear silver tequila, which is then ready to be aged and bottled.Tequila is obtained from the distillation of fermented juice of agave plant, Agave tequilana, to which up to 49% (w/v) of an adjunct sugar, mainly from cane or corn, could be added.
Añejo tequilas are great for sipping solo or mixing into cocktails. They clock in at 40% ABV and are found in all different price categories, from $20(ish) all the way into the multiple hundreds. Añejo tequilas spend one to three years in oak, which gives them their signature richness and texture.There are 166 different species of agave, 125 of which are found in Mexico. These grow in a wide variety of sizes and colours but since 1964, legally only one, Agave Tequilana Weber Azul, can be used to make tequila.
