Distillery Information

Mezcales de Leyendas was founded for a singular purpose — to find a wide, diverse range of Mezcal styles and bring them to the world. They started as a single boutique in 2005 — the only establishment focused exclusively on artisanal Mezcal in Mexico City.
The origin of mezcal is tied to the introduction of distillation technology which was introduced to New Spain either by the Spanish or Filipino sailors. In the 21st century, mezcal is still made from the heart of the agave plant, called the piña, in much the same way as it was 200 years ago.
Mezcal is a traditional iconic Mexican distilled beverage obtained from varied species of agaves. Regardless of the area of production, the process always consists of five stages: harvesting the agaves, cooking, crushing, fermentation, and distillation.The word Mezcal has its origin in Nahuatl, the language of the Aztecs, and means "cooked agave": mezcalli from metl = agave and ixcalli = cooked. Historically, Mezcal is the collective term for all agave spirits produced in Mexico.
Mezcal is a vast category of spirits made from agave and tequila is a small subset of mezcal, much like bourbon is a kind of whiskey, or Chardonnay is a kind of wine. "Basically, the way I think about it is that tequila is a kind of mezcal, but there are different kinds that are not," Block explains.
