This five-year-old single malt was produced at Glenallachie distillery, using peat from mainland Scotland and matured in a combination of ex-Pedro Ximenez and ex-oloroso sherry casks. The sweet peat works in tandem with aromas of raisin, dark chocolate and stewed fruit on the nose.
Sherry Casks are one of the cornerstones for the quality and ageing of brandy de Jerez. As we have mentioned, the casks have contained the best sherry wines, acquiring their best nuances thanks to their porosity, and transmitting them to the brandy during its ageing.
Sherry casks add a richer sweetness with dried fruit notes including raisins. These flavour differences are principally due to the species of oak, with Bourbon barrels made from American oak (Quercus alba) while Sherry casks are European oak (Quercus robur).
All Sherry is made from three grape varietals: Palomino, Moscatel and Pedro Ximenez (PX). 90% of all Sherry is made from the Palomino grape.
As discussed above, sherry is typically aged in a solera system, meaning that – generally speaking – the casks are in continuous use and part of a perpetual process of being partially emptied and partially filled as the sherry makes it way through the solera.
