Glendalough Calvados XO Cask Finish Whiskey

Appearance: A radiant amber hue reminiscent of golden autumn leaves, inviting and warm in the glass. Nose: The aroma unfolds with a captivating bouquet of ripe orchard fruits, dominated by crisp apples and hints of pear, intermingled with layers of caramel and vanilla. Subtle spices, such as cinnamon and nutmeg, add depth and complexity, while delicate floral undertones linger in the background. Palate: On the palate, a symphony of flavors dances across the senses. Rich caramel and toffee notes lead the way, followed by bursts of juicy apple and pear, creating a delightful interplay of sweetness and fruitiness. The influence of the Calvados cask is evident, with hints of oak and warming spices contributing to the whiskey's depth and complexity. Finish: The finish is long and satisfying, leaving a lingering sweetness on the palate, balanced by a gentle warmth that persists. The Glendalough Distillery, a true Irish Craft Distillery, was set up by five friends from Wicklow and Dublin with a passion for reviving the heritage of small size distilling in Ireland. Ireland once had over 200 licensed distilleries in the 18th and 19th centuries.The Glendalough Distillery is located just south of Dublin in the Wicklow Mountains on the road to Glendalough. Billed as being “Ireland's First Craft Distillery”, The Glendalough Distillery was established in 2011 by five friends from Wicklow and Dublin.
In 2011, Kevin Keenan, Gary McLoughlin, Barry Gallagher, Brian Fagan, and Donal O'Gallachoir founded the Glendalough Irish Whiskey Company, whose managing director was Barry Gallagher. Since there is initially nothing to sell after a start-up, whiskey was obtained from the Irish Cooley Distillery.
Outlawed in 1661 but now it's back, ours is triple distilled in a traditional copper pot-still using malted barley and pure spring water and bottled at 55% for a strong, authentic taste of Ireland's original spirit.
Glendalough Double Barrel Irish Whiskey is a single grain Irish whiskey, initially matured in American bourbon barrels before enjoying a finishing period of six months in Spanish Oloroso Sherry casks. This comes bottled at 42% ABV, brought down to this strength by Wicklow mountain water.
At Glendalough Distillery we progressively-craft luxury spirits in the Wicklow Mountains, in Ireland. We hope these spirits evoke a sense of place through their depth of flavour as they are an expression of what we love about these mountains.
