Rye whiskey was created in Pennsylvania when farmers and immigrants attempted to create whiskeys similar to what they would've enjoyed in their home countries. Since rye grew well in the Mid-Atlantic climate of Pennsylvania and neighboring states, rye became the grain of choice for these small-time distillers.Whisky has been distilled in Scotland for hundreds of years. There is some evidence to show that the art of distilling could have been brought to the country by Christian missionary monks, but it has never been proved that Highland farmers did not themselves discover how to distil spirits from their surplus barley.
In the United States, rye whiskey is, by law, made from a mash of at least 51 percent rye. (The other ingredients in the mash are usually corn and malted barley.) It is distilled to no more than 160 U.S. proof (80% abv) and aged in charred, new oak barrels.
Straight Rye Whiskey is a subcategory under the above broad definition, requiring rye whiskey to also be aged in new, charred oak for at least two years. It also can't include any additives in terms of flavour or caramel colouring.This whiskey contains a 100% Rye mash bill. Instead of using the typical barley in the mash bill to convert starch to sugar, we push the boundaries & use a Rye malt. This allows us a true 100% Rye mash, focusing on all the spice notes yet adding sweet subtle, fruity malt notes.
