Distillery Information

Sauvignon Blanc is most famously produced in Marlborough, New Zealand and France, where (in the former) its telltale gooseberry and grapefruit notes shine most brightly. It also does well in Australia, particularly Margaret River in the far west of the country, in addition to the Adelaide Hills.Coupled with a crisp dryness, light body and mellow colour and you can see why so many of us enjoy it. Sauvignon Blanc is almost always dry and young in style and rarely aged, although it is used in France to make refreshingly delicate, sweet dessert wines.
New Zealand has become one of the most renowned places for Sauvignon Blanc, with Marlborough leading the way as a classic and 'new age' region. They tend to be a lot more aromatic than French SB's.
Tom is a grape grower first and foremost, but he works very closely with current winemaker Maureen Martin, sampling at every stage of the winemaking and blending process to ensure that grape character is properly showcased.Wineries typically employ winemakers to produce various wines from grapes by following the winemaking process. This process involves the fermentation of fruit, as well as blending and aging of the juice. The grapes may be from vineyards owned by the winery or may be brought in from other locations.
Sauvignon Blanc is usually made in a dry style. This means that after the grapes are pressed, the sugar from the grape must is converted into alcohol by yeast. When all of the sugar is converted, it creates a fully dry wine.
