London dry gin is made from a base spirit, which is normally made from fermented and distilled wheat or barley but could also be made from grape or potato. The base spirit is flavoured with juniper (the key ingredient to any gin) and a mixture of other plants, herbs, fruits, nuts, spices and roots.The Distilled Dry Gin LN Mattei is obtained by unique distillation of a 24-hour maceration of plants composing our recipe including juniper berries, zests of Cedars and Corsican Lemons, bay leaves, etc…
Nicholson is the Original London Dry Gin, founded in 1736, it is liquid history, winner of multiple awards and known throughout the world. We distil this smooth, crisp gin in London to our proprietary recipe, first crafted in 1830.
In fact, if you don't count the Italian monks who are thought to have used juniper berries as flavourings in distilled spirits back in the 11th century, it's Holland that's credited as the birthplace of gin.The process for London Dry involves the maceration of natural botanicals in a 96% ABV neutral spirit from agricultural origin (usually grain based). This base spirit must be distilled a second time with added flavourings, the key ingredient of course being juniper berries.
The key difference between regular gin and London dry gin is that while regular gins are often sweetened after distillation (with sugar or syrup), London dry gins are not sweetened at all—a feature that gives them a less syrupy taste and more of an herbal bite.
