In the United States, rye whiskey is, by law, made from a mash of at least 51 percent rye. (The other ingredients in the mash are usually corn and malted barley.) It is distilled to no more than 160 U.S. proof (80% abv) and aged in charred, new oak barrels.
After about 18 months under construction, Sagamore Spirit Distillery opened on April 21st in the Port Covington neighborhood on Baltimore's waterfront. The facility spans five acres and includes a distillery, a processing building, and a visitors center, with restaurant and event space that will open in the fall.The three main ones are grain, water, and yeast, with the former in particular varying based on geographical origin and style of whiskey.
