La Luna Mezcal is made in Etucuaro, Michoacan. Tucked away in this mountainous region is the municipality of Villa Madero, which is the home to the Perez Escot family and Destiladora Las Azucenas.
Mezcal is a traditional Mexican distilled beverage produced from the fermented juices of the cooked agave plant core. The Agave salmiana from Mexico's Altiplano region is used for mezcal production. The agave cores are cooked in stone ovens to hydrolyze the inulin into fructose.
Mezcal distillation is a traditional and artisanal process. Most producers use clay or wood stills heated by direct fire, often with materials from the surrounding environment. These stills are much smaller than modern ones, making batches unique and limited.More than 90% of mezcal is made in the Mexican state of Oaxaca, but is now produced and commercialized throughout Mexico for the national and international market.
The most well-known maguey is the blue weber agave, because it's used to make tequila. You read that right—tequila's a type of mezcal. The name mezcal comes from the Nahuatl (or Aztec) word “mexcalli” meaning an oven-cooked agave. For this reason, it's called mezcal, since it's made from the distillation of the heart of the maguey.
While many people assume that Mezcal and Tequila are the same thing, they are actually quite different. Mezcal is still a distilled spirit made of Agave, but instead of being made of just one type of Agave like tequila, which is made of the Blue Agave, Mezcal is made of over 30 types of Agave.
