For starters, in order for a spirit to be called “Tequila” it MUST come from one of five authorized states in Mexico: Guanajuato, Jalisco, Michoacan, Nayarit, or Tamaulipas.The company's history begins in 1885, when the descendants of Don Antonio Faustino de Aceves y Casillas built Hacienda La Capillla. Don Antonio Aceves, better known as “Amo Aceves” was the founder of Capilla de Guadalupe, a town that got its name from the town chapel, built in honor of the “Virgin of Guadalupe”.With some 150 tequila distilleries producing almost ten times as many different brands of tequila there is an incredibly diverse range of tequilas now available.
Tequila is only produced inside the Mexican state of Jalisco and in some municipalities in Guanajuato, Michoacan, Nayarit, and Tamaulipas. Any agave-based distilled spirit outside those regions are called "mezcal." Other subtypes of mezcal you might see are Bacanora, Sotol and Raicilla.The first distillation process takes place in steel distillation columns, during which water is removed and alcohol is concentrated from fermented agave juice. The second distillation takes place in stills to obtain tequila with a range of 55-65% alcohol, depending on the brand.
