This is a limited release that is sold at High West's Blue Sky Ranch Distillery and Saloon & Distillery locations located in Wanship and Park City Utah, respectively. This whiskey consists of an MGP light whiskey mashbill, which they state on their website usually consists of 99% corn and 1% barely malt.In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David's love of the Old West and Utah's little-known whiskey history.
Janousek adds, “The 'light' in light whiskey does not refer to the proof or calories but rather that it is distilled to high ABVs to remove the congeners that lead to a lighter taste and less burn on the palate.” So, light whiskey must be distilled to more than 160 proof (80% ABV) but less than 190 proof (95% ABV), High West Distillery is Utah's first legal distillery since 1870, located at 7,000-feet elevation in the stunning Wasatch Mountains.
