Brandy refers to a distilled spirit made from a fruit-based wine and originates from the word 'brandewijn' which is Dutch for 'burnt wine. ' It can be produced using any fruits, for example pears apples or cherries, but brandy that is not made from grapes must be labelled with the fruit that it's made from.A rich mahogany colour with a flavour profile to match, dried fruits, oak, vanilla and an undertone of tobacco on the finish - Hennessy VSOP is delicious in an Old Fashioned. Mostly made of Ugni Blanc grape, once pressed, fermented, and twice distilled in traditionally shaped Charentais copper stills.
Is XO or VSOP better? An XO cognac must be aged for a minimum of 10 years, in comparison a VSOP must age for a minimum of four years. It comes down to personal preference which is better but an XO is usually considered as superior.
Brandy is usually produced in pot stills (batch distillation), but the column still can also be used for continuous distillation. The distillate obtained in this manner has a higher alcohol concentration (approximately 90% ABV) and is less aromatic.
