Hoping to recapture that quality, Estonian-born Swedish entrepreneur Olev Keltes established the Kelt Cognac company in 1987. Kelt VSOP is a great cognac, worth looking for. It is Napoleon grade cognac, with a taste, close to XO level cognacs, that is evident by the rancio notes and high viscosity.Cognac is a category of Brandy name named for the Cognac region where it is produced. This grape-based distillate is a protected French appellation d'origine contrôlée (AOC), which requires the adherence to specific rules during production of the spirit.Cognac can only be made from grapes grown in the strictly defined Cognac region of France. It must be made from the juice of at least one of three particular grapes, the most common being Ugni Blanc and the other two being Folle Blanche and Colombard.
