An especially prominent variation is the labeling "Kentucky Straight Bourbon Whiskey", used to indicate a straight whiskey made in Kentucky from a mash of at least 51% corn grain. For a straight whiskey to be called corn whiskey, it must use a mash with at least 80% corn and be aged in used or uncharred barrels.
Aged for 17 years, Hardin's Creek Clermont has a rich amber color with darker tones and a burnt sugar nose tripled with matured toasted oak and sweet vanilla. The palate has an initial presence of caramelized oak, followed by brown spices, hints of seasoned leather, and a smooth, sweet finish.
Most distillers put bourbon through distillation twice. In the first step, the bourbon goes through column stills. The second round distills it through attached, heated copper pot stills. These bourbon distillation rounds boost the alcohol content of the liquid and remove the mash and other impurities. As defined in the United States law, Straight Bourbon Whiskey is whiskey that is distilled in any of the 50 states from at least 51% fermented corn to no more than 160 proof (80% alcohol by volume [ABV]) and aged in new charred oak barrels for a minimum of two years.
Each Hardin's Creek bourbon is made from the same mash bill, aged 17 years, and bottled at the same proof. The only difference is the aging location (hence the name of each release).
