Freeland Spirits was founded by farm and food advocate Jill Kuehler and features the talents of Master Distiller Molly Troupe, currently the youngest Master Distiller in the country. This Portland, OR craft distillery also holds the distinction of being one of the few women owned and run distilleries in operation.
Freeland Spirits blends three-year-old and 12-year-old bourbons after aging in newly charred American oak barrels. They rest the blend in pinot noir barrels from Oregon's Elk Cove. It's this added time that gives the Bourbon it's Pacific Northwest taste.
Most distillers put bourbon through distillation twice. In the first step, the bourbon goes through column stills. The second round distills it through attached, heated copper pot stills. These bourbon distillation rounds boost the alcohol content of the liquid and remove the mash and other impurities.
