VSOP stands for “Very Superior Old Pale”. To achieve this classification, VSOP cognacs must be created from eaux-de-vie aged for at least four years. The VSOP category includes designations such as “Old” or “Reserve”.cognac, a brandy produced in the Charente and Charente-Maritime départements of France and named for the town of Cognac in the locality.But generally XO Brandy will be of higher quality than the VSOP. When referring to Cognac or Armagnac these terms refer to minimum legal aging requirements in oak barrel. For example, a Cognac labelled VS must have a minimum two years aging, while VSOP is four years and XO is six.Cognac is made with grapes, which are turned into wine then distilled twice and left to age in barrels. The big Cognac houses rely on the 6,000 growers in the region who supply grapes as well as eau-de-vie.Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
Cognac can only be made from grapes grown in the strictly defined Cognac region of France. It must be made from the juice of at least one of three particular grapes, the most common being Ugni Blanc and the other two being Folle Blanche and Colombard.
